Easy Stuffed Turkey Peppers

 

Happy Monday!

I hope you all had a great weekend! We had a double date Friday, and saw the new X-men movie (its good). Then Saturday was spent at the pool with some family and Sunday we did the church thing and hung out at the South West Regionals Crossfit competition!

It was a great weekend!

This week jumped right off to a great start.

I headed to the gym early this morning to get this crazy lunge workout done.

Let me preface by saying.. last week I did 100 lunges one day and didn’t walk normal for 3 days… I think being pregnant makes it harder for me to recover.

Pretty sure.

My booty is excited for tomorrow.

I did manage to make a legit dinner on Sunday night, that is a must make. My family absolutely devoured it! It comes together quick and easy.

I know, I know.. it has been about a decade since I last shared a recipe.

Stuffed Turkey Peppers

Ingredients:

 

Directions:

Pre-heat oven to 375 degrees

Cook your ground turkey in one large skillet.

Cook the package of Grilled eggplant & zucchini melange in another skillet

Make your rice- I use this rice,because its convenient and I just get it at my grocery store.

Combine the rice and eggplant mixture with the turkey. Mix well.

Stuff the peppers with the filling.

Bake for 30 minutes

Top with avocado,salt and pepper and serve!
