Weekends simply are my favorite! We always have time to do whatever, whenever.
Which probably will change with the holiday parties here and there! Still, they are something to look forward too!
We can even spend an hour throwing rocks into a river if we want too.
Now that the twins are old enough we like to take them to movies! If we have enough treats they are sure to sit through the whole thing. They always go for the arcade after to “hunt.”
On Sunday we make cookies.
Baylee NEVER lets me forget! She looks forward to it all week long.
She really does ask me everyday if it is Sunday.

Gluten Free Coconut Chocolate Chip Cookies!
Ingredients:
- 1 c. Smart Butter
- 1 c. brown rice flour
- 1 c. gluten-free oat flour *I used Bobs Red Mill Oats and pulsed them in my blender
- 1/4 c. + 1 T. cornstarch
- 1 t. xanthan gum
- 1 t. salt
- 1 t. baking soda
- 1/4 c. sugar (I used truvia and they came out just fine)
- 3/4 c. brown sugar
- 1 organic egg + 1 organic egg yolk
- 2 T. vAlmond unsweetened milk
- 1 1/2 t. vanilla
- 1 1/2 c. semi-sweet chocolate chips
- 1/3 C. unsweetened shredded coconut
Directions:
In a medium bowl, add the rice flour, oat flour, cornstarch, xanthan gum, salt and baking soda. Mix with wire wisk.
In another bowl cream together melted butter and both sugars with an electric mixer. Add the egg and egg yolk, milk and vanilla and mix well. Slowly add the flour mixture until mixed well. Add the chocolate chips and stir with a large spoon.
Chill the dough for 1 hour.
Pre-heat oven 375
Bake for 12 minutes!
