CINCO DE MAYO with Monday Motivation

HOLA! Good Morning you sexy beasts.

Yesterday was Cinco De Mayo!

We sort of celebrated.

Brent’s mom usually does a family fiesta with a pinata and somberos and all that jazz, but she was out of town this weekend so I was planning on throwing a little fiesta myself but my Saturday was spent in confinement to my bedroom and 2 feet from the toilet. So long story short.

I just made dip.



Everything is better with layers.


Even ogres.

To Make the dip- Layer the following in a 18in x 18in. pan.

1. 1 Can of Mashed Black Beans

2. Three avocados mashed and mixed with 2 Tbs. of lemon juice

3.  1 C. Plain Greek Yogurt. {I used Fage}---> BONUS: Protein!!

4. 1 cup Special Jacks Salsa {From Costco}

5. Mexican shredded cheese - desired amount

6. Sliced mini yellow tomatoes.- desired amount

I usually put sliced olives and green onions on top but was fresh out. Either way, this dip is always a hit!

The weather was so nice, I think it may be safe spring is here!

Brent and I took the kids up our favorite trail next to our house! I plan on running up it later today!



The twins did such a good job hiking!! Tanner looked for bugs and Bee was on the hunt for the largest “leaf” aka:weed.

It was a great day! '
